We are working with a fantastic client in the Lake District supporting them with their search for a Junior Sous Cher / Sous Chef for their 4* Hotel.

We are looking to speak with experienced candidates who have a minimum of 2 years’ experience working in 4* star luxury hotels operating high quality / award winning restaurants.

• Experienced Sous Chef, with a solid background working in high quality 4* hotels.
• A background in fine dining / rosette standard kitchens would be advantageous.
• Excellent financial understanding and the ability to work within forecasted budgets.
• Exceptional leadership skills, able to step in and run the kitchen in the Head Chefs absence and work with, motivate and develop the team around you.
• Passion, enthusiasm and creativity in the kitchen.

• Direct all kitchen operations in the absence of the Head Chef – food prep, cooking, food safety, ordering, suppliers, rotas, stocks, budgeting etc.
• Policy adherence – ensure all policies, procedures and standards are consistently adhered to.
• Menu development – desire and creativity to create & develop menus to drive the business forwards.
• Stock control & auditing – ensuring the kitchen is working within agreed and defined margins.
• Health, Safety & Hygiene compliance -Ensuring that all H&S, Food Safety, HACCP management and hygiene standards are continuously met.
• Team Management – shift management, staffing levels, recruitment, training & development, appraisals
• Food quality control – ensure all standards for food preparation, presentation & freshness is consistent across all dishes.
• Collaboration with FOH – communicate effectively with FOH Managers & staff during service and resolve any service-related issues quickly.
