About Sael:
Sael, a British brasserie from Michelin star chef Jason Atherton. Sael, housed within the iconic St James’s Market, will celebrate all things British – from the menu, featuring only ingredients sourced from the British Isles to the domestically-sourced furnishings, all of which will pay homage to the restaurant’s location in the heart of the Capital.

The latest concept from award-winning, Michelin-starred chef Jason Atherton and his wife, co-director Ihra Atherton, Sael aims to be a beacon of British tastes, appealing to domestic and international visitors alike. We're on a mission to redefine the dining experience, and we're looking for a passionate staff to join our team and be a part of this exciting journey.

Responsibilities:

  • Pastry Production: Assist the Head Pastry Chef in preparing and executing a wide range of desserts, pastries, and baked goods.
  • Menu Development: Collaborate on creating innovative and visually appealing dessert offerings that complement the restaurant's overall concept.
  • Quality Control: Maintain high standards of pastry quality, taste, and presentation, ensuring consistency in every dish.
  • Team Supervision: Supervise pastry staff, provide guidance and training, and ensure adherence to food safety and hygiene standards.
  • Inventory Management: Assist in ordering ingredients, managing inventory levels, and minimizing waste to optimize pastry operations.
  • Kitchen Collaboration: Coordinate with the culinary team to ensure a seamless flow of service and timely dessert preparation.
About You:

As a Pastry Sous Chef , we are looking for someone who:

  • Pastry Expertise: Demonstrates a strong background in pastry arts, including knowledge of baking techniques, flavor combinations, and dessert presentation.
  • Creativity: Possesses a passion for culinary innovation and a flair for creating visually stunning and delicious desserts.
  • Leadership Skills: Exhibits strong leadership abilities, can motivate and mentor pastry staff, and work effectively in a team environment.
  • Attention to Detail: Pays close attention to detail, ensuring precision in pastry preparation and presentation.
  • Adaptability: Works well under pressure, manages multiple tasks efficiently, and adapts to changing kitchen dynamics.

Qualifications:

  • Experience: Proven experience in a pastry role, with previous experience as a Pastry Sous Chef or similar position in a fine dining establishment.
  • Culinary Skills: Strong pastry skills with a solid understanding of baking techniques, pastry decoration, and dessert plating.
  • Leadership Abilities: Ability to lead a pastry team, delegate tasks effectively, and maintain a positive and productive kitchen environment.
  • Creativity: A track record of contributing to dessert menu development and a passion for exploring new pastry trends.
  • Adaptability: Capability to work in a fast-paced kitchen environment, prioritize tasks, and collaborate with other kitchen departments.
